Frying & Sautéing
Spotlight™ oil is remarkably stable, with a high oxidative stability index (OSI). In our fry study, it was ~5-7x more stable from the first frying to the tenth. Fries, donuts, and tempura taste great without having to change or dispose of the oil as often.
Spotlight™ oil is a clean, neutral oil with no offnotes. It is ideal for cakes and cookies, where you want more decadent flavors like chocolate or lemon to shine. It can also improve shelf life, allowing baked goods to stay fresh for an additional 24-48 hours, without oil leaching out.
Dips & Dressings
Spotlight™ oil has impressive emulsification properties. You can whip up batches of mayo or vinaigrette that won’t separate during service. The neutral flavor also makes Spotlight™ oil a great base for sauces and chili crisps, allowing the ingredients to shine.
Dairy Free & Vegan
Spotlight™ oil can mimic the creamy, silky, or fluffy textures that traditional or “alternative” butter or eggs provide. It makes a delicious oat milk creamer that does not separate, even when combined with coffee. It also makes creamy vegan ranch, oat ice cream, and fat-washed cocktails.
