Gimlet Cocktail
Makes 1 cocktail
Ingredients
Basil Spotlight™ Oil:
2 cups fresh basil, packed
¾ cup Spotlight™ Oil
⅛ tsp salt
Spotlight™ Oil Washed Gin:
10 oz gin of choice
(we recommend Hendrick’s, Junipero, Freeland)
4 oz of Spotlight™ Oil
Simple Syrup:
½ cup sugar
½ cup water
Cocktail:
2.5 oz Spotlight™ Oil washed gin, night before
5 basil leaves, muddled
10 drops of Basil Spotlight™ Culinary Oil
¾ oz fresh lime juice
¾ oz simple syrup
1 oz aquafaba
Garnish: basil leaf + drops of Basil

martini glass, served up without ice
Preparation
Spotlight™ Oil Washed Gin:
Make this the night before, it makes 4 drinks: combine 10 oz gin of choice with 4 oz of Spotlight™ Oil to a mason jar with lid. Shake mixture then add to freezer and let sit overnight (the fat will solidify). Pour mixture through a cheesecloth to remove fat particles and solid oil. Set aside and use when ready, will make 4 cocktails at 2.5 oz each.
Basil Spotlight™ Oil:
Add basil, Spotlight™ Oil, and salt to a blender and blend on high for about 30 to 45 seconds.Transfer to a small saucepan and simmer on medium for about 5 minutes, stirring occasionally. Let cool slightly then strain over a fine mesh strainer. Allow to cool completely before using.
Notes:
Makes ½ cup = 4 oz (x4, 1 oz dropper bottles) = ~450 drops
Cocktail:
Simple syrup: on medium to low heat add sugar and water and stir until sugar dissolves. Remove from heat and let cool completely. Add basil to the shaker and muddle. Then add Spotlight™ Oil washed gin, basil oil, lime juice, simple syrup, and aquafaba to the shaker and dry shake (shake without ice) vigorously for 20-30 seconds. Then add ice to the shaker and shake for an additional 30 seconds, vigorously! Strain through a fine strainer into martini glass. Garnish with drops of basil oil around the top of the drink and a basil leaf.
